A site keeps making, as its industry changes

Industrial sites connect manufacturing, employment and the continuing reinvention of Dundalk.

Dundalk's food and drink history has an industrial dimension. The brewery on the site of today's Great Northern Distillery was established in 1896. Its modern successor records how the brewery later adapted to lager production, became associated with Harp, closed in 2013 and passed into a new distilling venture in 2015. The distillery's first three-year-old matured whiskey came of age in 2018.↗1

Following a single site through those changes offers a useful way to read industrial Dundalk. Buildings, plant and commercial knowledge could acquire new roles rather than hold one purpose forever. This is an interpretive thread through the chronology, not a claim that brewing and distilling were identical trades. The former distillery buildings elsewhere in the centre, now used by the museum and library, tell another chapter of the town's manufacturing past.↗1↗2
